Gulab jamun-

Ingredients:

1 cup milk powder (Gulab jamun mix), water for dough as per requirement, Oil (for frying), 1 cup sugar, 1 cup water (for syrup), 3–4 cardamom pods, few saffron strands (optional)

Steps:

1. Make sugar syrup: boil sugar + water till slightly sticky, add cardamom/saffron. Keep warm.

2. Mix milk powder with water to make a soft dough (don’t over knead).

3. Roll into smooth small balls.

4. Fry on low flame till golden brown.

5. Soak in warm syrup for 2–3 hrs. Serve warm.

Bhel –

Ingredients:

2 cups puffed rice (murmura), ½ cup sev 1 boiled potato (chopped), 1 small onion, tomato, cucumber (chopped), 2 tbsp roasted peanuts, Green chutney + Tamarind chutney (to taste)* Chaat masala, salt, lemon juice

Steps:

1. In a large bowl mix puffed rice, sev, potato, onion, tomato, cucumber, peanuts.

2. Add chutneys, chaat masala, salt, lemon juice.

3. Toss quickly and serve immediately (stays crisp).
